Sun Dried Tomato and Rosemary Rolls
These savoury rolls are an ideal replacement to bread for those who are following a low glycemic diet. They are also suitable for people who may have a health reason and are needing to avoid gluten and/or dairy or are following the Specific Carbohydrate Diet. For anyone with SIBO, they contain suitable ingredients too.
Ingredients:
1 1/2 cups of ground almonds or almond flour
3 tablespoons of coconut flour
1/4 teaspoon of sea salt
1/2 teaspoon baking soda
2 tablespoons of extra virgin olive oil
1 teaspoon of apple cider vinegar
2 tablespoons of coconut milk
1 medium sized egg
1/4 cup of chopped sun dried tomatoes
1 tablespoon freshly chopped rosemary
Method:
Preheat the oven for 180C
Place a sheet of baking parchment onto an oven tray
Place the flours, baking soda, salt, oil, vinegar, coconut milk and egg in a food processor and process for around 30 seconds
Add the chopped sun dried tomatoes and rosemary and pules 2 to 3 times
Gather the dough into a ball and form into a circle and press down with your hand until until it is around 3cm thick
Cut the dough, like a pizza into 8 pieces and separate them slightly before baking them for 18 mins
