Easy courgette bread recipe


This sweet bread is more like a cake and is so easy to make and feels like a real treat to eat it . It is gluten and dairy free. The recipe has been adapted from Danielle Walker’s ‘Zucchini bread.’

1 cup of grated or shredded courgette
1 1/2 cups of ground almonds or almond flour
3/4 teaspoon of baking soda
1/2 teaspoon of sea salt
2 teaspoons of ground cinnamon
3 medium sized eggs, beaten
1/4 cup honey
1 medium sized ripe banana

Preheat the oven to 170C. Lightly grease a loaf tin/pan (8 by 4 inch) and place a piece of baking parchment on the bottom
Grate or shred the courgette and light press it between two sheets of kitchen roll to release any excess moisture
Place all the ry ingredients into a bowl and mix them up
Place the honey, banana and eggs into a mixer and beat for 1 minute until frothy. Add the courgette and continue to beat for another 15 seconds
Keep the mixer running and add the dry ingredients until they are all incorporated
Spoon the bater into the load tin and bake for 40 minutes until the middle is set and a skewer comes out clean
